Easy Peasy Smokey Cole Slaw

Just that kind of day...


  Haven't we all had one of those days???  The day that starts out okay and just goes downhill.  The day that you think you will accomplish so much because you are prepared and ready to tackle everything that's been building on your plate, but for some reason nothing seems to go your way.  That was my day today!  Easy simple tasks that should have taken 5 minutes became hour long projects.  The meeting that was supposed to be an hour, doubled.  The computer decides to freeze up and cause another hour delay. Or the phone call that turned into 40 minutes of sitting on hold and getting transferred to two people only to find out that the call wasn't even needed. It just wasn't my day!  The thought of preparing dinner or even thinking about what to have for dinner made me want to rip my hair out!!


  So imagine how awesome it was to be walking through the store and come across a bag of goodness that I could easily make into dinner. Immediately my day got a little better!  I found this bag of chopped veggies that made me think of cole slaw.  My kids LOVE cole slaw but it is typically loaded with sugar, buttermilk or some sort of dairy product. We really don't eat it much anymore unless I make it, which can take a while.  But with this bag I could make a cole slaw that would have a rainbow of veggies in it and take me about 5 minutes.  All I needed was a couple of chicken sausages to throw on the grill, some sweet potato fries and we could have a tailgate type dinner. 

  Of course because my day is going the way that it is, I can't find my recipe for the mayo.  Once I do, I will add to this post and also post the recipe separately. In the mean time you can use Primal Kitchen Mayo.  I also made two different batches of cole slaw, one spicy with jalapeños and one without the heat for the kiddos.  This slaw has a nice smokey southwestern feel to it and it definately made my day a little bit brighter.  Hopefully, your day is going much better than mine.   



Easy Peasy Smokey Cole Slaw

Serves:4-6

Prep Time:8 minutes 
Cook Time:0
Total Time:8 minutes

Ingredients:
  • 1 package of chopped/shredded veggies
  • 1 sweet red bell pepper
  • 1/4 cup cilantro leaves (about a handful)
  • 1 jalapeño(optional)
  • 1/2 cup amazing mayo
  • 1 TBSP apple cider vinegar
  • 1 TBSP lemon juice
  • 1 1/4 tsp cumin
  • 3/4 tsp paprika
  • 1/4 tsp pepper
  • 1/8 tsp salt
Instructions:
  1. Open and dump veggie bag in large bowl. 
  2. Chop bell pepper and add to bowl. 
  3. Roughly chop up cilantro and add to bowl. 
  4. Thinly slice jalapeño (if using) and add to bowl. 
  5. Mix the rest of the ingredients in a small bowl.
  6. Add dressing to veggies and mix throughly.
